Cowboy Jalapeño Poppers

Yeehaw, little chefs! Father’s Day is the perfect time to cook up something bold, fun, and full of flavor for Dad or anyone who’s your everyday hero. These Cowboy Jalapeño Poppers are just the thing! They’re creamy, a little smoky, and wrapped in crispy bacon for that true cowboy-style bite.

Don’t worry—once the seeds are scooped out, the jalapeños aren’t too spicy. Just the right kick for a tasty adventure on the range!

Cowboy Safety Tip: Jalapeños can be spicy on your skin, so be sure to wear disposable gloves and never touch your face. Always have a grown-up nearby when using the oven.

Turn up your favorite song, do a silly kitchen dance, and get those wiggles out before you start. Cooking is all about joy! And don’t forget to say a little prayer or give thanks for your food and the people you’re sharing it with.

Time to Giddy Up, Partner!

Step 1: Make the Cowboy Cream Cheese

What You’ll Need:

2 large jalapeños (for roasting)

8 oz cream cheese, softened

1/4 cup BBQ sauce

1/2 cup sour cream

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 tbsp fresh lime juice

Salt and black pepper (to taste)

Directions (with adult help!):

Preheat your oven to 425°F.

Place the jalapeños on a baking sheet (lightly sprayed with oil so they don’t stick).

Roast for about 15 minutes, flipping halfway through, until they look blistered and a little blackened (that’s where the flavor comes from!).

Let them cool, then (with gloves on!) remove the stems, skin, and seeds.

Dice the roasted jalapeños into small pieces.

Mix It Up!

In a bowl, combine:

Cream cheese

BBQ sauce

Sour cream

Garlic powder

Onion powder

Smoked paprika

Lime juice

Diced jalapeños

Stir until smooth and creamy. Taste (just a tiny bit!) and add salt and pepper if needed.

Step 2: Build Your Poppers!

What You’ll Need:

6 jalapeños, sliced lengthwise

12 strips of bacon

Your Cowboy Cream Cheese

Directions (with gloves + adult help):

Slice the jalapeños in half lengthwise.

Scoop out all the seeds and insides (this keeps them from being too spicy!).

Fill each jalapeño half with your creamy cowboy filling.

Wrap each one with a strip of bacon—like wrapping a cozy blanket around it!

Time to Bake!

Place your poppers on a baking sheet.

Bake at 400°F for about 20 minutes, or until the bacon is crispy and sizzling.

Let them cool a bit (they’ll be HOT, partner!), then serve with extra cowboy cream cheese on the side for dipping.
