Some Easter traditions come in baskets. Others come wrapped in foil from across the sea.
When I was little, my grandmother would send me Crunchie bars from Ireland. They were always tucked into my Easter baskets, and I remember savoring every golden, crackly bite. That airy honeycomb center coated in chocolate felt magical.
This recipe is my homemade tribute to her — made with real honey and simple ingredients. It’s nostalgic, joyful, and perfect for an Easter celebration.
This honeycomb candy is crisp, caramelized, and delicately sweet with notes of real honey. Paired with rich dark chocolate and a hint of sea salt, it feels both nostalgic and elevated — a perfect Easter indulgence made with heart.

What You’ll Need
• 1½ cups sugar
• ¼ cup honey
• ¼ cup water
• 1 tablespoon baking soda
• Candy thermometer
• Whisk
• Medium tall heavy-bottomed pot
• Medium metal mixing bowl
• 9x12-inch baking dish (such as Pyrex)
• Parchment paper
• 1 bag dark chocolate chips (optional, but recommended)
• Flaky sea salt (optional)

Directions
1. Prepare Your Pan
Line a 9x12-inch baking dish with parchment paper. Set aside.
2. Make the Honeycomb
In a tall, heavy-bottomed pot, combine sugar, honey, and water over medium to medium-high heat. Attach your candy thermometer.
As the sugar melts, gently swirl the pot occasionally (do not stir with a spoon). Watch the thermometer closely.
When the mixture reaches 300°F (hard crack stage), immediately remove from heat.
3. Create the Magic
Carefully pour the hot syrup into a medium metal mixing bowl. Add the baking soda and whisk quickly for 15–30 seconds.
Warning! The mixture will foam and expand rapidly — this is the honeycomb forming its airy bubbles.
Wearing oven mitts, immediately pour the foamy mixture into your prepared baking dish. Do not spread it — let it settle naturally to keep those beautiful air pockets intact.
Allow to cool and harden for about 30 minutes.
4. Break into Pieces
Once fully hardened, break the honeycomb into rustic shards and chunks.
5. Add the Chocolate (Highly Recommended)
Melt dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each, until smooth.
Dip or swirl each honeycomb piece in melted chocolate and place on parchment paper.
If desired, sprinkle lightly with flaky sea salt.
Refrigerate for about 1 hour, or until the chocolate is fully set.
