Mediterranean Stir Fry with Lemon Basil Cottage Cheese Whip

Paired with a creamy Lemon Basil Cottage Cheese Whip, this meal delivers a satisfying “power protein punch” while keeping things fresh and balanced.

You may substitute the grass-fed ground beef with ground chicken, turkey, or your favorite plant-based alternative.

Ingredients

For the Stir Fry

• 1 tablespoon olive oil

• 1 lb grass-fed ground beef (or protein of choice)

• 1 red onion, chopped (divided)

• 3 cloves garlic, minced

• 1 red bell pepper, sliced

• 1 zucchini, chopped

• 1 pint cherry tomatoes, halved (or 3 Campari tomatoes, quartered)

• ½ cup sliced black olives

• 1 lemon, halved

• 1 teaspoon fine sea salt

• 1 teaspoon Italian seasoning

• ½ teaspoon ground cumin

• ½ teaspoon smoked paprika

• 1 cup feta cheese (for serving)

For the Lemon Basil Cottage Cheese Whip

• 16 oz cottage cheese

• 2 tablespoons olive oil

• Juice of 1 lemon (about 2 tablespoons)

• ½ cup fresh basil, chopped (or more to taste)

• Pinch of sea salt


Instructions:

Stir Fry

1. Heat olive oil in a large skillet over medium heat.

2. Add minced garlic and half of the chopped red onion. Sauté for 2–3 minutes until fragrant and softened.

3. Add the ground beef and cook until browned, breaking it apart with a spatula (about 5–6 minutes).

4. Squeeze half of the lemon over the meat mixture and sprinkle with sea salt.

5. Stir in the red bell pepper, zucchini, tomatoes, black olives, remaining onion, Italian seasoning, cumin, and smoked paprika.

6. Cover and cook for about 5 minutes, allowing the vegetables to soften while remaining slightly firm.

7. Just before serving, squeeze the remaining lemon juice over the stir fry.

8. Serve topped with crumbled feta cheese.

Lemon Basil Cottage Cheese Whip

1. Add cottage cheese, olive oil, lemon juice, basil, and sea salt to a small blender or food processor.

2. Blend until smooth and whipped in texture.

3. Serve alongside the stir fry or spoon place the stir fry on top.
