Thai Basil Beef Rolls

What You Need for the Beef Rolls:

• 1 lb flank steak, thinly sliced into strips

• 12 rice paper wrappers

• 1 cup fresh basil leaves

• 1 cup fresh cilantro leaves

• 1 medium cucumber, julienned

• 1 small red bell pepper, thinly sliced

• 2 tablespoons fish sauce

• 1 tablespoon soy sauce or tamari

• 1 tablespoon lime juice

• 1 tablespoon brown sugar

• 1 teaspoon garlic, minced

• 1 tablespoon coconut oil

• Salt and pepper, to taste

Directions:

Prepare the Beef:

  1. In a bowl, whisk together fish sauce, soy sauce, lime juice, brown sugar, and garlic. Add the sliced beef and toss to coat. Let marinate for at least 30 minutes (longer if you have time—flavor builds beautifully!).

  2. Heat coconut oil in a skillet over medium-high heat. Add the marinated beef and cook for 3–4 minutes, until browned and cooked through. Season with salt and pepper. Set aside to cool slightly.

Assemble the Rolls:

  1. Fill a shallow dish with warm water. Dip one rice paper wrapper in for 5–10 seconds until just soft.

  2. Lay it flat on a clean surface or plate.

  3. In the center, layer basil, cilantro, cucumber, bell pepper, and a few strips of beef.

  4. Fold in the sides, then roll tightly like a burrito.

  5. Repeat and try not to snack on all the filling along the way .

What You Need:

• 1 medium avocado

• 2 teaspoons lime juice

Directions:
